the same applies to all meats mate,the raw weight is always going to be heavier than the cooked weight,so once you've cooked it and any water or fat is drained from it your left with just the protein content,so in order to make it back up to 100g cooked weight you have to add in some extra cooked chicken,there for bumping up the protein ratio,the protein doesnt magically appear from no where lol
