2 egg yolks

diced panacetta or bacon

2-3 table spoons of finely grated parmezan

half medium onion, very finely diced

pepper to season

Cook spaggetti as per brand instructions, when spagg has 5 mins left, cook pancetta in oil till brown and crisp (2-3mins), add onions and cook for further 2 mins. seperate egg yolks into bowl, when spagg is done add oil/pancetta/onions into eggs, quickly followed by spaggetti. quick stir season to taste and serve.

I know its simple but it taste great. I was shown how to cook this by my mate from pisa, so its pretty authentic to.
