Chicken breast cut a pocket into them (can be a bit fiddly)

couple of chillies


balsamic vinegar

1 onion finely chopped

2 garlic cloves finely chopped

fresh parsley finely chopped

double cream (can be omitted)

wilt the spinach (basically frying it with a couple of table spoons of water) until its all shriveled up and looks a quarter of the amount you started with, add that to the chopped onion, chili, garlic, parsley, pour some cream over it to make the filling and put inside the pockets.

lay the chicken breasts in tray and put in oven on about gas mark 6 and roast for about 30-40 mins, once out pour over the balsamic vinegar.

I have them with mashed potatoes and cabbage but thats up to you.

mine is similar.

Marinate the chiken in chosen sauce (i use hot sauce)

Butterfly the chicken and cook.

Put spinach and cheese inbetween breast.

Cook for another 5 mins
