If you've already booked your trip, this might be a bit late, but I did a helicopter tour of the Grand Canyon, Hoover Dam and the strip which was pretty good:

There's loads of tour companies that do different trips. You can even stay in the desert in a teepee overnight or on a ranch.
The buffet at the Bellagio was worth going to, and I've heard the Wynn has a great buffet. The Venetian hotel is impressive inside (stayed there), but the shops are really expensive. Wynn's got a ferrari or lamborghini garage in it. Bellagio fountains are alright - at least they're free. Cirque du Soleil shows are impressive, but pricey. We also stayed at the Hard Rock Hotel/ Casino which was OK - it's been extended since I was there (half decent steak restaurant in there, but you can probably get better). The stratosphere rides are worth going on - you can get buses on the strip that are cheap to get up there (the bus we went on was called the Deuce). The strip is huge (as are the casinos). We walked the strip from the Venetian down to the Mandalay Bay and back one night and went in every casino on each side (they're pretty much all the same). I wouldn't recommend doing it in the day if you want to walk.
I didn't go shooting, but I'm going again next year for a mate's wedding so I'll do it then. I wasn't a big fan of the place as I'm not a big gambler and I'd had enough after 4/5 days. It's probably really good if you go with a bunch of mates, but I didn't really think it was a great couples place. It's worth checking the following website for info on las vegas in general:

Golden Nugget's on Fremont Street isn't it? We went up there on the first night of our trip and the screen over the street is pretty impressive. Apart from that, I'd look out how far up the street you walk - there's some not so nice areas around there. We had a car, but I think you could get the Deuce from the strip to Fremont Street. If you're there for more than 4/5 days seriously consider hiring a car. Death Valley's a couple of hours and it will be a bit of a change. LA's a few hours (but a really easy drive) and you could always visit Venice Beach/ Golds? Venice is probably the most interesting bit of LA.
