I use the unrefined brown rice from Tesco, did not like the basmati stuff, never went soft enough regardless of cooking time.

Try doing it in the steamer - I think it tates better that way.

When bulking I sometimes cook mine leave a bit of water in the bottom (just a bit mind) and then add a spoonful of low fat garlic and herb cheese spread! Carbs aren't that high, or fat and it tastes a bit like a risotto!

I am the same I overcook the rice as its to hard , after its cooked I add 1 - 2 teaspoons of salsa in it and then mix it in topped of with 1 chicken fillet cooked in the oven in tinfoil maranaded with garlic and tobasco .

Unsure of the salsa if its good or bad but it makes the rice yummy
