i made nice

sweet pot and red pepper soup yest, just boil up the peeled and chopped veg, when it starts to get soft put in a good bit of black pepper, i added chilli flakes ( optional ), and blended it up, it was superb.

do you roast them for similar time/temp as with normal potatoes ?
Think Im gonna try roasting some today and have with chicken as they sound kinda nice

They take a bit less than normal spuds when oven cooking. I leave a sweet one in for around 45 mins on around 170-180 degreess in a fan oven, where I leave the same size normal spud for around an hour or more. I imagine it takes less time if you make them into wedges. Its best just to experiment to see how it goes. Stick a knife in to see if there not to hard inside.

Anybody know how many cals per 100g are in sweet spuds if you roast them?
It only says about boiling on the ones I have.

100g of sweet spud is the same no matter if you cook or boil them as long as you don't add any oil or overcook them.

If Im in a rush I mic them, scoop out the middle and mash it with a fork adding a little butter. Other wise I roast them.

I sometimes slice them up (about 5-10 mm slices) drizzle them with olive oil, and chuck em on the george for 10 mins (ish) depending on how soft you want them.

Sweet Potatoes

Nutritionally, sweet potatoes are an excellent source of vitamin A and a good source of potassium and vitamin C, B6, riboflavin, copper, pantothetic acid and folic acid.

When buying sweet potatoes, choose firm ones with no cracks or bruises. The flavor of raw sweet potatoes might be altered if they're kept in a refrigerator. They should last for two weeks or more if stored in a cool, dark, well-ventilated place and handled with care. If the temperature is too warm -- above 60° F.
they'll sprout sooner or become woody. Once cooked, sweet potatoes can be stored for up to 1 week in the refrigerator.

Eat the skins. There is alot of good nutrition in the skin, too.
sweet potato nutrition

Recipes
For the sweeter side for the a party
Cut 4 potatoes in wedges 10 wedges to a spud.
arrange in baking dish.
sprinkle cinnamon on the wedges
cook til tender in oven

last 10 minutes
baste with 4 oz of pineapple juice and small pineapple chucks
and 1/2 cup of finely chopped pecans.

Makes a great dessert dish that is nutritious and healthy.

Cinnamon Pecan Sweet Potato

It's the holiday season over here in the USA

Cinnamon Pecan Sweet Potato.
Serving size: 2 (1 for you big lads if you eat both halves.)

Bake one sweet potato
Cut potato lengthwise and scoop out the cooked potato into a small mixing bowl.
Leave the skin shell for the following filling:

Potato filling:
scooped out cooked potato
1/4c skim cottage cheese
2 TBS crushed pecans
1 tsp cinnamon

Mix ingredients together and refill potato skin
Garnish with roasted pineapple slices, if you like

You can just put the cottage cheese, pecans and cinnamon on top of a jacket as well, but I like to mix it all up and refill the skins when I am serving a buffet.

This is similar to recipe in the above first post on sweet potatoes; however, the presentation is different. A very dear friend reminded me that half the battle of a diet is to make it appetizing. Sometimes all that is needed for the same food to be more appetizing is a different presentation.

some nice recipes!!! i love sweet potatos but dont eat them nearly enough!
