Salmon fish cakes

When I discovered I was coeliac this actually made me feel a whole lot better.

8oz Peeled spuds
1lb Salmon (fillet or tinned)
4oz Carrot
2tbsp lemon rind
2-3 tbsp corriander (chopped)
1 egg yolk
salt and black pepper
Plain flour (I use rice flour)

Boil the spuds and mash them. Blend the salmon into a puree with a mixer and add it to the spuds. Grate the carrot and that to the mix with the corriander and lemon. Add the egg and mix together. Form roughly into 4 cakes.
Cover with flour and chill fcovered for 1/2hr.

Spay a griddle pan with light oil and heat the pan until very hot.

Drop the cakes on and cook for 3 or 4 mins per side until the fish is cooked.

Eat eat eat....try it and let me know how it tastes.
