Salmon Gratin

Made this over the easter weekend, girlfriend had some and she loved it. It's nice and creamy whilst still low fat.

200g Piece of salmon cubed
Handful of new potaoes cooked and halved
Half an oniion sliced
1/4 bulb of fennel sliced
Button mushrooms halfed
2 smoked bacon fillets cubed
1 small clove of garlic finely chopped
200g pot of Sainsburys low fat soft cream cheese
60g Sinsburys low fat cheese spread
Dash of semi skimmed milk
Breadcrumbs

In a bowl combine low fat cream cheese, low fat cheese spread, loosen mix with some semi skimmed milk so you've got a thick sauce concictency.
Combine all the other ingredients ina bowl and pour over the sauce, give the mix a stir to coat everything and put in a dish.
Cover top with breadcrumbs and spray with, spray oil, pop in preheated oven (180) for 15 minutes, then take out and pop under grill to brown top for a minute.

This tastes good hot or cold!
