Keto pancake with spicy vanilla custard

This recipe of mine is great for all keto dieters - pancakes with zero impact 'carbs' and the best custard you will ever eat when dieting.

You will need

6 whole eggs

2 heaped dessert spoons wheat bran

2 heaped dessert spoons of oat bran

1 teaspoon vanilla essence

1/2 teaspoon mixed spice

7 Splenda sweetner tabs

1 tbsp hot water

5 tbsps water to add to bran and egg mix


non-stick frying pan

hand whisk

1. Dissolve Splenda tabs in 1 tbsp water

2. Add wheatbran and oat bran to the blender with the 5tbsps water, 1 whole egg and 5 egg whites, saving the 5 yolks for the custard. Blend well for about 2 minutes.

3. Heat pan and add egg and bran mix, cook fairly gently on a medium heat.

4. To prepare custard use the 5 remaining yolks add the dissolved sweetner, vanilla essence and spice and whisk with hand mixer until thick and frothy. Put in microwave for 15 seconds, take out and whisk again, return to the microwave for a further 15 seconds and whisk again, Return custard to the microwave for another 15 seconds and might at this stage need just 10 more seconds in the microwave and again should now have a custard with a thick dense consistency

5.Pancake should be ready to be turned over and cooked for just a couple more minutes

6 Serve pancake with the spicy custard spread thickly over the top.....

Heaven on a plate......
