I wouln't leave a pre-mixed for more than 3-4 hours before drinking and it would need to be chilled during this period, |

As for mixing the night before there wont be any degradation but, due to peptidase enzymes present in the whey there will be breakdown of the milk proteins and so further hydrolysis. Is this not an advantage first thing in the morning? About the bubbles, think babies colic. Not nice. | |
