Sorry but I used to work in san fran, LA and boston went to many of the "top end" places over there, IMO very poor - when the Americans used to come over to London I would take them out to eat - they all without exception accepted the food was better in London. I do not know where the hell you have been eating in london maybe the "Angus Aberdeen Steak House" but if you are over again let me know and I will recommend you some good places.

Beat up a couple of egg whites and marinade your chicken in the egg with a Tbsp of Corn Starch and a pinch of salt. Put it in a bowl, cover, leave at room temp for at least 30 mins.

fresh cod or chicken. it's not too hot for frozen stuff though.

You shouldn't cook meat if it's still frozen. Let it thaw first no matter what you're cooking on.

Why not just WOK the chicken like I do. It's quite easily the best way. You can chuck in whatever you like too.

Always nice with cajun spice in a WOK. Then deglaze with some white wine.

i have one of the large double grill formans,with temp control and timer, works wonders 4 me, as far as cleaning goes , i just run a wet sponge scourer over it whilst its hot, takes about 2 min to clean
