Dels world famous low carb meatballs

Right I have been asked by a few people to disclose the recipe for my meatballs. These meatballs are low carb, high protien and low fat. And I have been eating them during my pre-contest diet.

They taste so good you will be convinced they are bad for you.

Ingredients (Makes 2 portions):
400g tesco extra lean mince (Will have the "Good for you" logo on the packet)
1 very small onion
6 medium mushrooms
5 bird eye chillies (Makes the dish HOT, less if preffered)
2 tablespoons of worchester sauce
100ml of blended tinned plum tomatoes (Made into a thick sauce)
A little salt
Mixed herbs
A little pepper
1 egg white (Optional)



Get a medium pot add tomotoe sauce, half chopped onion, 6 chopped mushrooms, 2 finely chopped chillies, 2 tablespoons worchester sauce and a generous helping of the mixed herbs.

Now in a large bowl add mince, the other half of oinion (Very finely chopped), 3 finely chopped chilies (Seeds the lot), a little salt and pepper, some mixed herbs and if used 1 egg white.


Get yer hands in the bowl (Clean them first LOL), and squish the mince and mix the ingredients for about 5 mins (The longer the better).

Now put the pot on cooker turn onto a medium heat until sauce is simmering then grab a blob of mince and roll it into a ball (Around about a golf ball size). You should get about 8 balls from 400g mince.

Plop the balls into the simmering pot, and leave them to cook for 25 mins turning occasionally.

When time is up remove balls and scoop about 3 table spoons of the sauce only for each portion (1 portion = 4 balls).


Thats it, eat em right away or refrigerate and consume within 24 hours.

A trully healthy low carb meal that you will swear tases like a cheat. Just ask Ianm etc

Del,,

I would eat these meatballs when I am off the diet - superb. So much so I was like a dog eating beetroot when you gave them too me at work!! lol

If any of you have a dog give it a bowl of beetroot and you will see what I mean.. Messy but funny..

They are like drugs I swear, you start off with just a tiny little amount and then you end up wanting more and more..............till you get to my stage and you eat and chew em whole and raw.LOL

I should point out that if you dont like hot food probs best to use one chilli in the sauce and two in the mince. Thats quite mild with only a slight tingle.

Though I have been known to put the whole pack in LOL

posted a long time ago but as a newbie I think this desrves a bump for newer memebers! I am no chef but made this last night and was it was tip top!!

going to be enjoying it a lot more often!

I made these whilst on this diet and they were beautiful. I didn't even put any sauce on them! Just took them out the pot and ate with 200g veg :P! YUMMY!!
