Quick Chicken Lunch

Suitable for a 4000 calorie low carb diet as one of six meals.

300g cooked chicken breast
1 teaspoon of dry american barbecue spice (tescos)

Cook the chicken at 200 degrees with the spice sprinkled over it for 20 minutes or until cooked. You will need to cook at least 500g raw chicken to yeild 300g of cooked product depending on water content of your meat.

Drizzle 1/2T of Udo's over the cooked and marinated meat.

then add either:

1 cup of spinach
or
100g Asparagus
or
100g fine beans

Leave the spinach uncooked but add a further 1 T of Udos as a dressing.

Cook the Asparagus or beans in 1 T of Butter for 3 mins on a low heat until they are slightly softened but still crunchy, pour butter over veg when served.

Meal is prepared in minutes, chicken cooks in about 20 and can be pre-prepared in bulk.

With Spinach
Calories: 697

Protein: 93g

Fat: 32g Sat 7% Poly 22% Mono 10%

Carbs: 1g

Ratio: 57/01/42

With Asparagus/Beans
Calories: 682

Protein: 95g

Fat: 29g sat 14% Poly 10% Mono 11%

Carbs: 5g

Ratio: 59/02/39
