Low Carb Chilli

Low-Carb Chili Recipe

Adapted from a low-carb recipe by Vicki Palmer, this meal suits 1 of six meals in a very low carb 4000 calorie diet.


425g extra lean Tescos healthy eating ground beef
50g canned chopped tomatoes
25g onions, chopped
1 garlic clove, minced
1 Tablespoon extra virgin Olive Oil
1 OXO Cube

Spice Mix:
3 T chili powder
2 T cumin, ground
1 T coriander, ground
1 T dried oregano
1/4 tsp cayenne pepper
1/2 T unsweetened organic cocoa powder (yep you read it right!)
2 tsp low sodium salt

Mix the seasonings & Oxo cube together to make the spice mix. Heat about
half the olive oil in a large pot on a medium heat. Add the onions and saute over medium heat for 7 minutes. Add the rest of the oil to the pot, then stir in the spice mix and the garlic. Lower the heat a little and stir for 2 minutes. Add the tomatoes. Bring to a slow boil. Crumble the beef into the mixture. Cover and simmer for 30 minutes, stirring occasionally. Leave lid off for last 15 minutes to thicken, if desired.

This makes a meal for one, obviously not served with rice! with the following macros:

Calories: 690 Protein: 91g Carbs: 10g (tiny bit high but I couldn't get it any lower!) Fat: 33g sat 28% poly 2% mono 37% ( I would take two fish oils with these) Ratio: 52/05/43
