I find multigrain is the best all round.
Quantity you eat depends on whether you're cutting/gaining, your weight, etc.

As power says

it depends, aslong as its wholemeal/grain, personally i dont eat any unless im totally stuck for carbs then maybe 1 or 2 slices, although id rather have oats if i have the choice.

At your size I'd just have a couple of slices with some eggs in the morning.

Be sure you get protein and fats along with the carbs in the bread.

You need to sort out a meat/fish based meal for around 2pm - you're going from 11 till 5 with hardly any protein, not good.
Get some good veg in there too, brocolli/asparagus/cauliflower.
At breakfast, try some oatmeal along with your eggs.

Bedtime drink - try mixing your whey with yoghurt and cottage cheese, that will see you through the night better.

blimey - how big's the scoop?

Personally I only have whey PWO (80g with honey and water), and mixed in with oatmeal, or cottage cheese.
At your weight I'd be aiming to get AT LEAST 200g of protein per day (excluding PWO), the majority of this from food not whey.

Are you looking to put on muscle or lose fat?
