new and need diet advice

diet advice please

Hi guys just joined the forum and would like some advice on my diet.

I used to train about 10 years ago and seemed to do ok but having got type 1 diabetes 5 years ago all my training stopped. now ive decided to get back into it and would really appreciate some advice on my diet as listed below.

I train 4 times a week concentrating on 2 body parts per session and my goal is to bulk up but not wanting to increase my body fat if thats possible??

Breakfast (7.30am): oats and water 1 bannana and 1/2 pint semi skimmed milk mixed with 2 raw egg whites 1 apple

Lunch (12.30-1pm): 2 wholemeal pitta breads with scrambled egg or tuna or chicken fillets with mixed salad (lettuce, red onion, green pepper, mangetout, carrot)
1 pear or apple

Tea (5-6pm): 2 Baked potatoes with tuna, mixed salad. 1 apple. sometimes swap potatoes for pasta or rice.

After training (8pm): 1 chicken fillet an 1 whole egg and 3 egg white omlette with tuna and quark or cottage cheese

3-4 Pints of water each day

I try not to have too many snacks as this makes my bs fluctuate
im grateful for any advice

cheers
