![]() | Chicken with Pesto and Cheese Stuffing mornin all, Thought I'd share another recipe to jazz up chicken: 4 skinless boneles breasts green pesto jar lots of grated Parmasan Cheese (to taste) 2 garlic cloves pack of sun dried tomatoes (note) these are just ingredients that I've tried, you can substitute the parmesan for any cheese and can add peppers etc if you want. for reference, stilton (blue cheese) seems better suited to steaks. Method: Cut a 2 inch slit into the sides of the chicken breasts and wiggle the knife inside to make a nice pocket in each one. crush up the garlic cloves and tomatoes and mix it with the cheese in a bowl. using a knife, spread a generous amount of pesto sauce inside the pockets. carefully fill each pesto'd-up pocket with the cheese/garlic/tomato mix so they're nice and plump. Now pinch the sides so the pockets close, (you might wanna pin it closed with some cocktail sticks). Cook by grilling, baking or frying (olive oil) till the chicken's done. enjoy! Thing I like about this is you can use variations of pesto and cheese to suit your taste or even just to try something new.
