A couple of hours should be fine on defrosted chicken if you make some folk holes in it. I nealy always chop my chicken breast up, add a little (about a tblsp) walnut/almond or grapseed oil and some dry seasoning (cajun, fajita, BBQ etc...) and mix it all in together - then chuck it on the Forman. Takes about 5 mins. Add some brown or basmati rice and veg. I cook my rice by adding a cup and a half of water to a cup of rice. Add to a low heat until the water has absorbed - don't stir too the rice much. Just part it to see if the water has gone. As soon as there is no water left in the pan take it off the heat and cover with a plate for 5 mins. You shouldn't have any rice stuck to the bottom of the pan. Again, you can add dry 5 spice seasoning to the rice. This method makes the rice a little less hard or dry. For basmati - just add a cup of rice to 1 and 1/4 cups of water.

Don't like raw meat being open in the fridge. If I forget I'll leave it out on the side if it isn't too warm. Fridge is best though. I much prefer to cook fresh chicken breast - but thats a different debate.
