Lemon and Mustard Chicken

try this......

4 chicken breasts
2 garlic cloves
3 tbl sp whole-grain mustard
3 tbl sp lemon juice
6 tbl sp olive oil

place chicken in a non metalic dish.
crush garlic mix with mustard and lemon juice.
slowly pour in oil and whisk with a fork.
pour the mixture over the chicken leave to marinade for 2-3 hours, turn occasionally.
preheat the grill, grill for about 14 mins turning and basting half way through.
goes good with salad, pour the remaining marinade over the salad.

serves 2-4 people.

that sounds good. will give it a go, cheers. but wont the lemon juice split? with the oil and mustard? been a chef, what i would do is nock the sauce up in a seprate pan, then pour it over once chicken is cooked. tricky one to work with lemon juice, when mixing it with oil

I have a similar version of this once a week, I accompany it with roasted veg, sweetpotato, carrot, red onion, courgette spanking gorgeous!
