PowerU Chicken & Lentil Soup

Can't face another grilled chicken breast? Try this:

1kg Chicken breast
200g yellow split lentils
Small Onion (finely chopped)
3 cloves garlic
25g butter
1 green chilli (optional)
2 pints chicken stock
Pinch of Cumin Seeds
Handful fresh Coriander (Cilantro to Yanky boys!)

Cut up chicken as small as you can and fry it in a large pan with the butter, cumin, onion and garlic, when chicken has turned white add the stock, lentils and chilli, cover and simmer for 30 minutes. Remove from heat, add chopped coriander and blend for about 20 seconds.

Smashing - high protein low GI full days food!
(adjust amount of chicken/lentils/butter to suit your daily macros)
