With your rice

Hey Guys,

I am boiling myself a bag of rice in the morning and taking it to work, and I eat it with some chicken as one of my meals. However, it's dry as hell and I was looking for some suggestions as to what I can do to make it a little more interesting?

Any good sauces or anything?

Cheers.

Re: With your rice

Try adding some home-made salsa:

chop up (dice)

2 or 3 fresh tomatoes
1 red chilli
1 green chilli
1 red onion
1 clove of garlic
some fresh coriander

Add 2 or 3 teaspoons of olive oil, some tabasco sauce and grind in some black pepper.

Mix together with your rice and chicken to give it a kick!

or if hot and spicy isn't your thing...

Lemon and ginger rice and chicken:

Chop up (dice)

1 2-3cm piece of fresh ginger root
1 clove of garlic
4 spring onions

Mix into the rice with 2-3 tablespoons of lemon juice (fresh or Jif lemon), some black pepper and a dash of dark soy sauce.

Hope this helps a bit.

Re: With your rice

Nando's Sauces, O MY GOD! I make my chicken and rice up at night, with some Organic Olive Oil, and some BBQ Nando Sauce, mix all together bang in the fridge, and its ready in the morning for work. Either eat cold or Nuke it for 2mins. Tastes amazing!!

Re: With your rice

It does Geo.

At the minute, I am cooking the chicken in an oven bowl. Firstly marinade over night, and then simply put it in the oven for around 1 hour 30 minutes. I find that this helps keep the chicken juicy, as I feel the GF drys it out?

Are you buying the Nando's sauce from Tesco? The sauces I have seen in there are all marinades?

Okay I will do mate, I will take trip to Tesco for some more chicken tomorrow and take a look for the sauce.

It's just ordinary sauce though right, not marinade?

Re: With your rice

Try wrapping your chicken fillets in foil THEN sticking them under the george foreman, they dont go dry AND you dont have to spend an hour cleaning the thing afterwards! Win win !
