![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() | Bulking Taco Pie and Pineapple Bulking Taco Pie and Pineapple 1 TBS minced onion with 3 TBS water 1 chicken breast cooked (baked, boiled, leftovers) and diced Taco seasoning or 2 tsp hot sauce 1/4 C water 4 egg whites 1 whole egg 2 oz cheddar cheese 1 C fresh pineapple Taco seasoning: 1 tsp chili powder 1/2 tsp cayenne pepper 1/2 tsp cumin 1/4 tsp oregano In small mixing bowl, beat eggs together. Set aside. Spray small 6 inch skillet with nonstick spray. Turn heat to high heat. Add onion, 3 TBS water, chicken. Cook until the water evaporates, stirring frequently. Add taco seasoning and 1/4 C water. Reduce heat to medium and simmer for 2 minutes or until water evaporates. Pour egg mixture over chicken. REDUCE heat to low. Cover skillet for 4-7 minutes. Cook until eggs set (not runny) ![]() Sprinkle cheese over mixture. Cover until cheese melts. Serve with 1 C pineapple on the side. (pineapple is the carbohydrate) You can add 2TBS salsa on top when eating the taco pie. Salsa is not calculated into values below.
