Not just another pancakes recipe!

Hi All

thought it would be useful to post this from our March 2007 newsletter.. .... recipe developed though weeks of trial and error:

Ultimax Pancakes

Ingredients:
1 Large Egg
5 Large Egg Whites
75ml Semi-skimmed Milk
3oz Porridge oats

You will also need:
Blender
non-stick pan

The number of pancakes depends on size of the pan, but with a 10" frying pan, you should manage 4 pancakes

Blend all ingredients until smooth. If you have volume markings on your blender, you should now have between 425 - 450 ml of pancake mix. Leave to stand for 10-15 mins.

Get your pan real hot and grease lightly. Stir the mixture well before frying, as the oats will have begun to settle at the bottom of the mix. Use one quarter of the mix for each pancake, and fry on medium high heat until each side is golden brown.

Roll up the individual pancakes or stack and then drizzle liberally with honey or with lemon juice and a light sprinkling of splenda/ candarel. Sugar-free strawberry jam is a nice alternative.

Carbohydrate: 63g (plus some extra from the honey/ jam)
Fat: 19g
Calories: 562 Cals
