Liver Recipes

Want to add liver to my weekly diet, does anyone know any simple (tasty!?) recipes for cooking with liver?

Tasty! you gotta be joking,i know its full of goodies but it tastes bloody awful.Id be throwing it in a madras(possibly vindaloo!) sauce if i managed to brave the stuff!

get a bag of buckwheat flour, add in some salt and pepper. Chuck in the liver and shake it up till it's coated all over.

just fry it... use spray oil and get the pan hot.

serve with whatever you like...

The taste depends on the type of liver you buy. Pigs liver has a much stronger flavour than lambs liver.

If your not worried about price i would buy calves liver slice it thinly and just lighty flour, season and cook in olive oil (hot pan!)
If you want to go for something like lambs liver you need to soak it in milk for at least 6 hours then cook the same as calves liver

Like stated above a red hot pan and sear it quickly. You odnt want to over cook it either as its dry and like rubber. Have it pink.

Obvioulsy onions go well with it as does bacon.

Brought frozen chicken livers from tesco today, 45p what a bargain! Fat content looks a little high, not saturated though and nice high protein content. Look forward to the tasting....

I personally prefer them in some sort of casserole or stuffing.

You can make a 'dirty rice' with them as well... add a bit of lean mince or chicken and increase the protein.

You will have to modify the recipes a bit.
Liver recipes will tend to have bacon in them for that fat flavoring.

Cajun Dirty Rice
I don't use the bacon drippings nor the gizzards. I use brown rice.

I like the recipezaar site because it gives the nutritional values.

You'll probably need to trim the chicken livers to take any exess fat off and then in a hot pan with olive oil, when brown add balsamic vinegar and serve on a bed of salad.
