Stuffed Peppers

4 large bell peppers ( cut off tops and remove seeds)
1 lb cooked chicken breast (I use left over from the beginning of the week)
1 C brown wild rice (cooked)
1 TBS chili powder
1 small white onion finely chopped
1 15oz can of tomato sauce

Mix chicken, rice, chili powder, onion, and tomato sauce together in a mixing bowl.
stuff the bell peppers with the mixture. Place bell peppers in baking dish and cover with foil.
cook in oven at 350 degrees F for 45 minutes.

One stuffed bell pepper contains the following:

calories 102
fat 1.2grams
carbohydrates 10g
fiber 1.4g
protein 10.3g
K 148mg
Ca 10mg
C 15mg

Sounds good. I never use chicken always ground beef. I will try this though!

Change the rice for Cous Cous, and then put some olives on top too! Also when not dieting put some feta cheese on top too - yum yum
