offal is al the organ meat mate.....proper english word for it all collectively....lungs, heart etc....basically anything edible, even the tripe(stomach. bowel etc).... is classed as offal.....hope this helps hacks pal

Did you know that chipolatas originally means onion???


Q. What are chipolatas?
A. In the United States, chipolatas are small Italian sausages made of co****ly ground pork and flavored with thyme, chives, coriander, and cloves, and sometimes red pepper flakes. In Britain, the name is often used more broadly to refer to any small sausage, but those in the know consider it to be a small, co**** pork sausage, generally including rice, and stuffed in a natural casing.

In France, it is essentially the same thing, although perhaps without the rice. When something is served à la chipolata, it generally consists of a dish of game, poultry, meat, or eggs garnished with braised chestnuts, small glazed onions, glazed carrots, sautéed mushrooms, blanched and fried pieces of bacon, and fried chipolatas, which may all be bound up in a Madeira wine sauce.

In Italy, where the name originated, it is an onion. Well, technically not — the word cipolla is onion. And an onion stew that was served at least 350 years ago that was called cipollata sometimes or always included sausages, and it is likely that non-Italians (particularly the French) paid more attention to the sausages than the onions and gave the name of the dish to the sausages. Apparently the Italians were too polite to correct their guests.

I love lambs hearts... best roasted in a tin with about an inch of water in the bottom with a splash of olive oil on the top. cover with foil.. cook for an hour on gas 6.

kidney and liver are great too....

the best meal i ever had though was marinaded sheep intestines, rolled and cooked like a donner kebab... absolutely gorgeous....

some people say I have a cast iron stomach....

my wife is always offering me a steak with my heart.. or is that a stake through the heart... i can never remember but i keep getting funny chest pains and hate it when she cooks with garlic.

there used to be a lot of them in my diet as a kid.

like pure duck` s fat mmmm tasty (not as hardcore as the eskimos though. i saw this guy kill the seal and `test` it by cutting a good chunk of fat off and eating it raw yummy. moral here is if seals did cardio that would save their lives)

chicken fillets? naah. how about some other parts like chiken`s neck or feet (its like sucking on a small-scale t-rex feet lol)

liver is quite good if cut into very small pieces and fried with some onion. has a sweet taste.

sausages made from pork liver+blood. or fish soup made with fish blood (cooking the head as well as the collagen it contains makes the soup gelatinous meaning makes it more thick and yummy :madgrin:)

nowadays i stick to breasts exclusively because i`m a picky cnut.

as for offal thats the part`s lions and other carnivores in the wild first consume when they killed their prey as it is very nutritious and they need vitamins too. :deadhorse thats where the name animal pack comes from. :focus:
