Why I am still gaining?

In the past few months I've been stuck working shifts, which includes one day per week where I finish at 10.30pm, and have to be up again at 4am the next day, which means I get about 2 hous sleep that night tops. I also am unable to have regular meals at work, as it's basically wahtever I can carry in my pocket is all I can eat. So most days I'm stuck with some of those chicken slices they sell in supermarkets(which I read are packed full of water) and protein bars. I obviously try to eat well outside of working hours. I also hardly ever get to the gym, typically I will have a schedule like like this:
day 1-Back
day 3-Chest
day 5-Legs
day6-day12 rest

Some week I don't even get to work legs, although I'm having some knee problem ATM which I'm hoping to get sorted out so that isn't worrying me much. I have been following this pretty awful schedule for almost 5 months now, am finally changing shifts now, but am wondering why, despite having 7 days in a row of now working out so often, I am at my heaviest ever, and also lifted my PB bench press and bent over row in the last few weeks

I know they say less is more, and when I work out my diet I am taking in just under 300 grams of protein per day(typically I manage 280), but I would've expected no gains at all really, so what's the deal?

I would say you were overtraining in the past and your one of those guys that probably hits it hard in the gym. Now that your forced to train less your making gains. Like I have said too many times, if your not making gains your probably overtraining or not getting enough sleep. I also suspect your diet is fine.
