Workout critique

Hey all, i'm home from uni for 4 weeks and have enough time to work out a new split, have been doing this (i know its not great but i've noticed some reasonable gains considering only training 2 days):

Day 1 (Chest/Arms):
Inc DB Press- 2x12, 3x8
Dec French Press- 2x12, 3x8
Seated machine chest press (with v.low grip)- 1x12, 3x8
Seated DB Curl- 5 sets
Inc DB Fly- 4 sets
Hammer Curls- 4 sets
Tricep Press Down- 4 sets

Day 2 (Shoulders/Back):
Pullups (assisted)- 5 sets trying to keep 8-12
Db Press- 5 Sets
T-Bar Row- 1x20, 3x8-12, 1x5-6
Lateral Side Raises- 5 Sets
Lat pull down- 3 Close, 4 Wide
Upright Rows- 4 Sets
(Shrugs- 2 sets) Depending on time/energy

Each workout taking around 60-90mins, the reason theres no legs is that i cycle in and out of uni everyday for 15mins in and 25mins back (steeply uphill) and have actually gained alot of development from this. Plus i dunno if i can squeeze in the 3rd day.

But anyway my holiday split, i can train as much/little as i want so a 3/4 day split seems like my friend. Was thinking something along the lines of, in no specific order:

Day 1 (Chest/Tri's):
Dips
Close Grip bench
Standing Frenchpress
Inc Db Press (or flat bb bench?)
Inc Db Flys

Day 2 (Shoulders/Back): - Need some help here, not sure how to fit in all the parts of back

Clean and press
DB Press
(Side Raises)

3 of:
Lat pulldown
Bent over rows
Upright Rows
Shrugs
Seated Cable Row's

Day 3 (Biceps/Legs):
Seated DB Curl
Hammer Curl

Squats
Leg Press
Calf Raises

Edit: Forgot:
Height: 6' 1 1/2
Weight: 15st having just cut from 16.5/17st (always thought i was endo but feeling pretty meso atm!)
Experience: 3 years on and off with about 18months continuous recently
Body fat?: Err i can post some photos if requested but basically went from abit chubby to now reasonably trim, 15-20%?
