I would eat a protein and a fat with every meal.
Back off on the carbs some and add the diffrence as a protein and a good fat.
Like, avacado, fish oils, olive oil.

Your first meal almost has no protein in it.
As well as 2:00, 5:00, and 6:00
Just because you are a vegetarian does not mean that you cant have enough protein.

Also, vegetarians can have deficiencies in B-12, creatine (from lack of meat), among other things. You might want to supp some of that stuff.

I also think that restance training is actually better than cardio for getting rid of fat.
You burn fuel while lifting. You also burn fuel while rebuilding, kindof has a double impact here.
Also the requirement for fuel in muscle is more and this is kindof dieting all in itself.
Muscle requires fuel.
Fat is fuel whether stored of consumed.

Have you considered some circuit training, like whole body workouts with no rest between sets?
