i wouldnt run the prop and the sustanon. they are both the same thing only differin in what esters are used. Yes you can start low, is easier to taper up with ace too as its in your system quick so you can tell how you react. Nothing wrong with cutting on that cycle mate. prop would be better for cutting than sustanon.
