Fats stimulate the release of Noradrenaline so it helps keep you awake. I always try to make my mid afternoon meal reasonably high in fat (peanut butter, or oils with something) to keep me awake ( i hate the mid-afternoon lull).
Carbs are great before bed (unless you are really carb intolerant) because they help to release serotonin (makes you feel calm and sleepy). So a combination of cottage cheese, yoghurt (high in tryptophan a precursor for serotonin) and a banana (high in carbs and naturally-occurring serotonin) is a superb pre-bed meal.
