Bolognese

Thought Id add this as its something I'm having each week and couldn't see a recipe for it here.

Ingredients:

Serves two

440g Lean Mince (I use Sainsburys be good to yourself range)
1 Medium Onion
1 tin Chopped Tomatoes
2 Teaspoons (tsp) Tomato puree
1 Tsp chopped Garlic or 1 clove chopped
1 tsp Paprika (or more to taste)
1 tsp Oregano
1 tsp Basil
1 tsp Olive oil

Method

Start with pan (I use my wok) on heat at mid range (3). Add oil to pan (its very little, use less if need be). Added onion chopped and garlic. Mix until onion separates and softens.

Next, turn heat up to full (5) and add mince. I break the mince up when adding it and also while stirring. Brown the mince (stir in continuous until all mince is brown). At this point I turn on the next ring at mid heat (3), you don't need to do this if you have a gas cooker.

I use this point to drain the mince, not fully, about 80% of the water/fat from the pan.

(I sometimes add mushrooms here as well, but I've not included them this time).

Next, add the tin of tomatoes, the puree, and all of the herbs. Stir in for a minute. Now move the pan to the other ring, or turn your gas down to mid way. Cover the pan with a lid for 15mins simmering.

Next remove the lid, stir a couple of times, and let simmer without the lid for a further 10mins, making sure isn't sticking.

I then serve this on a bed of mixed leaves around 50g (typically baby spinach, Lambs lettuce)
