Cinnamon Pecan Sweet Potato

It's the holiday season over here in the USA

Cinnamon Pecan Sweet Potato.
Serving size: 2 (1 for you big lads if you eat both halves.)

Bake one sweet potato
Cut potato lengthwise and scoop out the cooked potato into a small mixing bowl.
Leave the skin shell for the following filling:

Potato filling:
scooped out cooked potato
1/4c skim cottage cheese
2 TBS crushed pecans
1 tsp cinnamon

Mix ingredients together and refill potato skin
Garnish with roasted pineapple slices, if you like

You can just put the cottage cheese, pecans and cinnamon on top of a jacket as well, but I like to mix it all up and refill the skins when I am serving a buffet.

This is similar to recipe in the above first post on sweet potatoes; however, the presentation is different. A very dear friend reminded me that half the battle of a diet is to make it appetizing. Sometimes all that is needed for the same food to be more appetizing is a different presentation.
