fittata or Spanish omelette

Had one of these at the weekend and I really love em!!!. You can experiment and put whatever you like in them, in my one at the weekend I had chicken, bacon, cherry tomatoes, New potatoes, Fennel, red onion and some low fat cheese spread.

4 egg whites, 1 whole egg
2 bacon fillets sliced
150 g chicken sliced
Splash of milk
Cherry toms halved
New potatoes cooked halved
1/2 red onion sliced
Sliced fennel
30g low fat cheese spread
Olive oil
Preheated grill

In a bowl beat the egg mixture, heat some olive oil in a large frying pan, add the chicken and bacon. Cook for a few minutes
Add the veg being used and cook for a further minute.
Now pour on the egg mix, adds ome salt and pepper and dot low fat cheese spread on top of frittata, cook on stove for 2 minutes to set bottom, then pop under grill to finish off, till golden brown.

Lovely!!! quick and easy and you can put pretty much whatever you want in them!!
