ok... I a bit sleep deprived at the moment.
Gentlemen, take a look again.

It means that you are using a real live honest to goodness raw ( not cooked) chicken egg white instead of an egg substitute such as the eggnations etc....

Now that you mention it, I had to think about it for a bit and then realized it was a recipe for bodybuilders. They have special needs, you know. I just copied it from the free source.
I have edited it.
