| Low Fat Chicken Madras
Ingredients:
16 oz of Chicken Breasts
1/4 TSP Fennel Seeds crushed
1 TSP of Chilli Powder
1 TSP Fresh Ginger crushed
1 TSP Garlic crushed
1 TSP Turmeric
1 TSP Cumin
1 TBSP ground coriander
1 TBSP of Curry Powder
3 TBSP of Tomato Puree
1 and a 1/4 cup of water
1 Large Onion Chopped
1 Handful of fresh Coriander
2 Green Chilli’s
Directions:
Grind up the fennel seeds and add to bowl along with:
• Chilli Powder
• Crushed Ginger
• Crushed Garlic
• Turmeric
• Cumin
• Ground Coriander
• Curry Powder
• 3 TBSP of Tomato Puree
• 1 ¼ cups of water
• Stir well and leave…
Chop the large Onion add to a pan with a little Olive Oil fry until soft add the Chicken chopped and cook until meat is sealed…
Take the bowl and add to pan with the chicken and onion in…
Leave to simmer for 10 min…
After 10 min add chopped Chilli’s without seeds along with fresh Coriander continue to stir for a further 5-6 min and then leave to stand for at least 1 hour…
Serve with your preferred Rice and enjoy… |
