Raw grated carrots and beetroot
Finely chopped red onion
Finely chopped celery
toasted sunflower and pumpkin seeds
lemon juice and some olive oil with basil, oregano, thyme and rosemary
Also go bonkers for this one at times:
Cooked spinach or green with garlic
topped with olive oil after cooked
Another fav is this red lentil bolognese I make with spagetti squash
I also make this wicked chicken and leek thing with parsnips
