| apparently by cooking the egg you improve the bioavailability of the protein contained, so it depends what you are eating the egg for.. quality protein? or quality micronutrients? personally i only eat the whites anyway so this article is of little value to me, but its interesting to note the difference between organic and regular egg yolks (in terms of the ratio between O6 and O3 EFA's), certainly if i ever do decide to add a yolk in my diet i'll make sure i use organic
